Ingredients For ravigote sauce

1/4 csnipped green onions

2 Tbspbutter, divided

3 Tbspdry white wine

1 Tbspvinegar

1 Tbspall purpose flour

1 clight cream

1/4 tspsalt

1/4 tspdried tarragon, crushed
How To Make ravigote sauce

1Cook green onions in 1 tablespoon butter till tender. Add wine and vinegar. Simmer, reducing liquid by half.

2Melt 1 tablespoon butter, blend in flour. Add light cream. Cook and stir till mixture bubbles. Remove from heat, stir in salt, and tarragon.

3Return to low heat; gradually stir in onion mixture. DO NOT BOIL.
