In a large iron bowl beat the egg whites until small peaks form.
In a saucepan boil the sugar, cream of tartar & prunes over low heat.
After it comes to a boil, slowly add it to the egg whites.
Mix on medium speed until egg whites form stiff glossy peaks.
Note: Best used on my "Oh So Sad Prune Cake"....
