Ingredients

2 Tbsp
olive oil
4
diced onions

shredded carrots

diced green bell pepper

garlic cloves, finely chopped

tomatoes, seeded and diced
6 oz
tomato paste
2 Tbsp
brown sugar, dark and firmly packed
1 tsp
salt
2 tsp
oregano
2 tsp
basil
1/2 tsp
pepper

Step-By-Step

1Heat oil in skillet over medium heat.

2Cook onions, carrots, bell pepper and garlic in oil, stirring occasionally, until tender.

3Place vegetable mixture and remaining ingredients in a 5 quart crock pot.

4Cook on high for 8 hours.

5When sauce is done, divide into 2 cup portions and freeze for later use.

6Yields 11 1/2 cups.
