This is a "quick" version. You have to put in in a spot where it is in the sun all day for two days. Otherwise you can let it "ferment" for 3-4 weeks. Serve sprinkled on baked, broiled, or fried fish, or conch. Note: Old Sour is highly concentrated and should be used sparingly.

Ingredients For bahamian old sour

  • 1 Tbsp
    salt
  • 1 pt
    key lime juice (unsweetened)
  • 6 sm
    hot red peppers (i.e. bird)

How To Make bahamian old sour

    Dissolve the salt in the juice in a glass jar, and let stand for an hour.

    Add peppers; cover and let sit in the sunshine 2 days. Remove and discard peppers; bottle sauce. Refrigerate.
