back to basics: fool proof white sauce

I was recently asked by someone new to cooking if I would share my white sauce recipe. It is completely foolproof and it sure dresses up a meal in a hurry. I use this basic sauce for chicken ala king, leftover turkey, new red potatoes (...add a touch of dill!), peas, beans, baby carrots and many other things. You can also simply make it into a cheese sauce by adding one cup of shredded cheddar cheese along with the milk. Thin with additional milk at the end, if necessary. Enjoy!

    cup butter
  • 1/2
    cup flour
  • 1
    tsp. salt
  • 1/2
    tsp. pepper
  • 4
    cups milk

How To Make back to basics: fool proof white sauce

    Melt butter in a large saucepan. Add flour, salt and pepper. Stir with whisk until well combined. Over low heat, cook gently while whisking for one minute. Do not let flour brown.

    Gradually add milk while whisking. Increase heat to medium and continue to cook just under a simmer. Don't let it come to a full boil. Continue to stir until desired consistency is reached (5-8 minutes). If gets too thick, never fear! Just add a little milk and you're good to go.
