- heavy whipping cream
- romano cheese, finely shredded

1The trick to this version of the sauce is to stir continuously. Melt the cream and butter (usually one stick is enough). Add garlic and pepper. Add cheeses in small amounts, stirring each batch in until melted, then add more until all used. Continue to stir until completely smooth throughout. Serve immediately over pasta or as a dip for bread.
