Here are two recipe I found in my Amish cookbook for Catsup. The first is frowm Mrs Perry Lambright. the second is from Mrs Jonas Yoder.

Directions Step-By-Step

Catsup best

2 gallons thich tomato juice
2 1/2 cups vinegar
1 tablespoon pickling spice mix
2 large onions (chopped)

Boil these until onions are soft, then put through a sieve. and put back on the stove and boil 1 hour.

Mix the following in a bowl and moisen with water.
8 cups sugar
8 tablespoons sure gel (found in the canning aisle)
1/2 teaspoon clove, ground
1/2 teaspoon connamon spice
7 tablespoons salt
add to the juice and boil 10-15 minutes more. Put into canning jars and seal.

4 qts cooked and strained tomatoes
2 tablespoons salt
3 cups sugar
2 cups vinegar
1 tablespoon cinnamon
1/2 tsp nutmeg
1/2 tsp red pepper
1 tsp allspice
1/2 tsp ground cloves
1/2 tsp dry mustard

NOTE: There was no entry as to how to prepare, but I think if you used the one above you could figure it out.
