I first started using this in Venezuela and when we moved back to the U.S. I wanted to make my own as I did not expect to find it here. I use it in my Arroz con Pollo( Rice with Chicken), which is a Peruvian dish and it really enhances the flavors.

Ingredients

3 Tbsp
ground coriander seeds
1 Tbsp
oregano, dried, ground
1 Tbsp
thyme, dried, ground
1 Tbsp
salt
2 Tbsp
paprika, sweet mild
2 Tbsp
white pepper
1 tsp
cumin seeds
1 tsp
achiote/annatto if available

Step-By-Step

1Place all ingredients in a mortar and grind to a fine powder with the pestle. Use at your own discretion.
