| 1 lb. thick sliced bacon, diced | |
| 2 lbs. tomateos, seeded and diced | |
| 1 medium white onion, diced | |
| 1/2 cup sugar | |
| 1/2 cup packed dark brown sugar | |
| 3 tbsp. cider vinegar | |
| 2 tbsp. minced garlic | |
| 1/4 tsp. red pepper flakes | |
| 2 tbsp. chopped fresh parsley | |
| salt and black pepper to taste |

Directions
Cook bacon in large pan til crisp. transfer bacon to paper towel lined plate; discard drippings.Add tomatoes, onion, granulated sugar, brown sugar, vinegar, garlic, and pepper flakes to pan along with bacon. Bring mixture to a boil, stirring often. Simmer mixture, stirring occasionally til thick and jam like consistency, 1 1/4 to 1 1/2 hours. Stir in parsley and season with salt and black pepper
