Oh this is going to be a BIG hit at my next family reunion. I have some cousins that LOVE bacon!

One tip ... Make sure that you are very attentive to this recipe and stir often. The brown sugar and the maple syrup have a tendency to burn.

Ingredients

1 lb
smoked bacon..add liquid smoke if you like
4 clove
chopped garlic
1 medium
onion..sliced
3 Tbsp
brown sugar, firmly packed
tabasco sauce according to taste
1 c
strong coffee
1/4 c
apple cider vinegar
1/4 c
maple syrup
salt and pepper
extra water

Sharon it is a basic for bacon jam .. I was looking for something special for a holiday treat and my girlfriend made it and I demanded she share of course..i would even tweak this with some heat maybe .. but have not yet because everyone likes it as it is

barbara jean why could you not use apple juice flavored with molasses..honestly there is no hint of coffee flavor..and it makes a medium size jar of jelly size.. I know a lot of work.. but it is meant for a treat or special occasion..i make it for a brunch at the holidays..

I would like to know how much jam this recipe makes. Just over 1 cup?
I saw that one poster used the recipe within two weeks. Any comments on how long this keeps in the refrigerator?
