Savory Fruit Compote

- 6 oz
- onions, fine dice
- 1 oz
- whole butter or bacon fat
- apples (tart) or peaches, peeled
- 4 oz
- granulated sugar
- hot paprika, to taste
- salt and white pepper, to taste
1In a large skillet or Dutch oven, sweat the onions in the butter or bacon fat without browning.
2Slice the apples or peaches and apricots into thin, even pieces. Add the apples to the onions and saute for 1 to 2 minutes. Add the apricots.
3Sprinkle the sugar over the fruits and cook, uncovered, over medium heat until tender. Season with paprika, salt and white pepper. Serve warm.
