I found this in a German organic food magazine. Haven't tried it yet but wanted to keep the recipe. Sounds interesting. Let me know how it turns out if you try!

Ingredients

lemon
2 Tbsp
smooth white almond butter
1 tsp
vegetable broth granules
2 tsp
dijon mustard
1 tsp
curcuma/tumeric
1 tsp
sweet paprika powder
200 ml
canola oil
salt, to taste
pepper, to taste

Directions Step-By-Step

Juice lemon.

In a tall mixing bowl / jar combine almond butter with 100ml lukewarm water, broth granules, dijon mustard, tumeric, paprika powder and lemon juice and blend with immersion mixer on high, slowly adding the oil, until a yellow cream is achieved.

Season with salt and pepper to taste and use in place of regular mayo.
