Ingredients For stuffing stuffed mushrooms

48button mushrooms (about 2 1/4 lbs.)

3 Tbsptomato sauce

1 Tbsptomato paste

3 Tbspolive oil, extra virgin

1 smshallot, sliced
-
4 clovegarlic, minced
-
4 cprepared stuffing mix, day old

1/4 calmonds, slivered, toasted
-
1/4 cparmesan cheese
-
3 Tbspcreme fraiche or sour cream
-
1 Tbspparsley
-
1 tsppepper
How To Make stuffing stuffed mushrooms

1Preheat oven to 400 degrees F.

2Remove stems from mushrooms; slice stems. Mix tomato sauce & paste; brush each mushroom with tomato mixture & place on a large parchment lined pan.

3In a pot, heat 1 tbsp oil over low heat; add shallot & garlic. Cook, stirring, about 2 minutes. Stir in stems; cook 1 minute. Add leftover stuffing/dressing; heat. Remove from heat. Stir in almonds, 3 tbsp cheese, creme, parsley & pepper.

4Mound stuffing/dressing in mushroom caps. Drizzle with remaining oil & remaining cheese. Bake 22 minutes or until golden.
