Marinated Zucchini Salad

This is a great recipe I created many years ago to use up all of that extra zucchini and tomatoes from my garden. It's quick, easy and tasty!!

Ingredients

small zucchini, sliced
1
medium sweet onion, halved and sliced
1
large tomato, peeled and roughly chopped
1/4 c
fresh basil, chopped
8 oz
bottled italian dressing
salt and pepper
1 Tbsp
freshly grated parmesan cheese

Step-By-Step

1Mix all ingredients (except Parmesan) in a large bowl.

2Transfer to storage container, cover and refrigerate for at least 3 hours.

3Before serving, sprinkle Parmesan over top.
