Kiwi Vinaigrette

I love the sweet-tart flavor of this dressing over a bowl of mixed greens and veggies. It's such a "summertime" taste!

This recipe makes enough vinaigrette for 4 medium-sized salads or 2 large ones. Be sure to use soft, ripe kiwi or it can be a bit tart.

Ingredients

kiwi fruit, peeled & coarsely chopped
3 Tbsp
canola oil
2 Tbsp
red wine vinegar or apple cider vinegar
1 Tbsp
honey
1/4 tsp
salt
1/4 tsp
white pepper

Directions Step-By-Step

Combine all ingredients in a blender and process for 5-10 seconds or until smooth. Pour into a serving container and refrigerate. Serve over greens.
