frozen cranberry salad and fruit salad dressing

I have made this recipe since I got married in 1962. I found it in a 1954 copyright First Edition Westinghouse Cookbook. My cookbook doesn't have covers anymore as I have used it so much! This salad is great for the holidays but I sometimes make it on other occasions when I can get fresh cranberries. I hope you like it as much as I do. The preparation time does not include making the salad dressing. It is a separate recipe and takes only a few minutes to prepare and cook until it thickens, however so easy to make. Ingredients For frozen cranberry salad and fruit salad dressing

  • 1 pkg
    cream cheese
  • 1/2 c
    cranberry sauce, jellied
  • 2 Tbsp
    lemon juice, fresh
  • 1/8 tsp
    salt
  • 1 c
    heavy cream, whipped plus lettuce for serving salad on
  • FRUIT SALAD DRESSING
  • 1/4 c
    sugar
  • 1/2 tsp
    salt
  • 1 1/2 Tbsp
    all purpose flour
  • 1 lg
    egg
  • 2 Tbsp
    white vinegar
  • 3/4 c
    pineapple juice

How To Make frozen cranberry salad and fruit salad dressing

    Beat cheese until smooth. Add cranberry sauce, lemon juice, and salt. Whip until thoroughly mixed. Fold in whipped cream.

    Place in metal ice cube tray(s) or comparable small pan. Freeze!

    Cut in squares and serve on lettuce leaf with a topping of fruit salad dressing.

    FRUIT SALAD DRESSING: Mix ingredients in order given, stirring well after each addition. Cook over low heat until thick and smooth, stirring constantly. Chill thoroughly before serving.
