Cucumbers and Onions
|Serves:||at least 4 or more|
|1||cucumber, sliced thin|
|1||sweet onion, slice thin (i like the texas sweet)|
|3/4 c||sugar, can use splenda instead|
|1/3 c||cidar vinegar (i use white distilled vinegar)|
|1/2 tsp||salt (optional, i don't add it)|
|pepper, to taste|
|couple dash(es)||celery seed|
|couple dash(es)||dried parsley|
Sliced cucumbers and onions in a light homemade sweet/tart vinegar dressing. This recipe is easy, tasty and down right yummy. Make early in the day and let marinate in fridge. Really good served with fried chicken, mashed potatoes and creamy gravy. I make them sugar free with splenda.
If my cucumber and onion are large I will double the dressing ingredients.
I like the dressing poured over tomato chunks, chopped cucumber chunks, chopped green onions, green and red pepper chunks and sliced celery for another salad variation. Enjoy!
