Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

Serves:
1Cup
Method:
No-Cook or Other

Ingredients

1
6 inch piece seedless cucumber, peeled
1 clove
garlic (use a small clove)
3/4 c
mayonnaise
1 1/2 tsp
lemon juice
1 tsp
dry mustard
2 Tbsp
fresh dill, chopped or 1 tbsp dry
salt to taste

Step-By-Step

1Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)

2Place remaining ingredients in food processor and blend together

3Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.
