A nice vinaigrette

1/3 cup red or white wine vinegar
3 tablespoon shallots, minced
3 tablespoons fresh herbs, such as parsley, basil, or tarragon
1 tablespoon fresh lemon juice
1 teaspoon dijon mustard
1 teaspoon sugar
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic, minced
1 cup extra virgin olive oil

Use this vinaigrette time and again to flavor more than salads -- -- -- toss it with boiled potatoes or drizzle over a steak.

mix all ingredients except olive oil in a blender or food processor
drizzle in the oil while the blender is running to create a dressing that won't easily separate. Makes 1 1/2
