Universal "Home Brew" Shake & Bake Coating
Soak or dip fish in water, beer, or beaten egg mixture before coating.
Dip fish fillets in beaten eggs, then roll in potato flakes. Season with salt, pepper, and paprika.
For a different taste try dipping the fried fish in sweet pickle juice.
Place skinned and filleted freshwater drum in lemon juice for 1/2 hour.
Roll in flour, salt, pepper, and paprika before frying.
When served cold they taste almost like a pork chop.
