Ingredients
| 2 lb | ground beef |
| 2 can(s) | ro-tel diced tomatoes & green chilies |
| 2 can(s) | cream of mushroom soup, undiluted |
| 2 c | montery jack cheese, hand grated |
| 1 large | box velveeta queso blanco, cubed |
| 1 large | onion, chopped |
| 8 oz | cream cheese |
| 1 jar(s) | old el paso pickled jalapenos slices, chopped |
| garlic salt and pepper |

Directions
Season ground beef with garlic salt and pepper and brown with chopped onion until done. Drain if needed.While ground beef is cooking cut Velveeta Queso Blanco into cubes, shred the Montery Jack Cheese and chop jalapeno slices.Pour ground beef into crock pot. Put remaining ingredients on top and stir to combine. Do not drain Ro-Tel's.Cook on low for 1 hour, stirring occasionally to combine mixture as it melts. Turn Crockpot to warm if you aren't ready to eat yet. Serve with tortilla chips and an ice cold red beer. Enjoy!

great addition is to use one pound of ground beef and one pound of sausage...and if you are real man, make it the hot sausage....I am one of those folks that like the extra spicy kick....and, as always, if you do choose to make this the hotter version...have a gallon of milk on hand which I typically serve in shot glasses...sometimes even with tequila!!! Oh, that reminds me...lemons enhance this spicy savory as well!

Annette, the texture of yours looks great too. Although the hambuger dip I have had (with sausage in it) is really good, ours is also very thick, thick enough for sandwiches. It is actually a little too thick for some chips. They break. Yours looks completely dip-able (new word). :)

I know what you mean Kat. Velveeta tends to do that to dips. I think keeping the liquid in the Ro-tel helped with this along with the added creaminess from the soup, cream cheese and jack cheese. It does get thick if it stand in your bowl too long but I had no trouble eating up before that happened. Like I said though too, I also added a little red beer to mine as well because I LOVE beer cheese flavor.
