Ingredients

HOT REUBEN DIP: (CROCK POT)
1 lb corned beef, chopped fine
2 c sauerkraut,drained and rinsed
1 1/2 c dairy sour cream
8 oz pkg. cream cheese, softened
12 oz pkg. swiss cheese, shredded
AMISH REUBEN SPREAD: (CHILLED)
8 oz corned beef, cooked, chopped
8 oz cheddar cheese, shredded
8 oz can sauerkraut, drained and rinsed
1/2 c mayonnaise- any type
1/2 c thousand island salad dressing

Pat's Notes:

I have used these 2 recipes for a long time at least 30 years- I did not have a crock pot back then ; I made it in the oven-now that I have one it is easy to make and stays warm...My cousin Margaret Ann gave me this spread recipe from her mom-in-law and I used it at a Tupperware Party- remember those? LOL...

Hot Reuben Dip-Crock Pot:
Combine all ingredients into a crock pot, using only 1/2 the Swiss cheese mixed in and the remainder sprinkled on top and heat until warmed and cheese has melted...keep on warm.Serve with rye crackers or bread.

Amish Reuben Spread-Chilled:
Chop corned beef in food processor ,if desired.
In a large bowl, stir together all ingredients, until well blended.
Cover and store up to 3 days. Serve on rye bread or crackers.Sprinkle top with dill weed , if desired.

Both of these sound very good. Our market carries a brand of kraut that is almost like homemade so it was would extra good. Now I have something to do with leftover corned beef and I am sure I could cut either recipe in half for the two of us. Thanks Pat! :)

Dorothy if you cut the crock pot recipe down just bake it in the oven until it is heated through and cheese has melted- let me know if you like it...

Pat, I don't have a crock pot so figured I would use the oven--I have a small baking dish that would be perfect for 1/2 recipe. I will let you know after we had it if we liked it---I am sure we will because we love everything that is in it. :)

Pat these both sound wonderful!!!! Dorothy what brand kraut do you use that tasted like home made? St. Patty's Day is my 19th Anniversary and I would love to make this for the hubby :)

Nancy, we love Bubbies because it is an old world recipe and has no preservatives and has to be refrigerated. We use to make kraut with friends and this jarred kraut is so like the homemade. It is prepared in Canada and we can get it in our local supermarket in the deli section. We have also found it at Trader Joe's. You might check their web site to see if it is carried in your area: bubbies.com

Dorothy, I did wear a green shirt, top , and shoes! It was a riot!!!!! Thanks for the good wishes! Thanks also for the name of the kraut. We do have a Trader Joe's, so I will look there!

Thank you ladies for all your responses to this recipe- the best kraut to use does not come in a can as it can take on a tinny taste- use the kind in a jar or in the bag in the dairy or cheese section it is kept cold...
