French Onion Dip

- sour cream
- 1 1/2 c
- yellow onion, thinly sliced
- 2 c
- beef stock (see recipe in "the basics")
- kosher salt and freshly ground pepper
- vegetable oil
1Add about 1 tablespoon vegetable oil to skillet and heat over medium heat.
2Add onions and season with salt and pepper. Cook slowly until caramelized and brown.
3Add beef stock and reduce to 1 tablespoon. Remove from heat and let cool to room temp.
4Combine onion mixture with sour cream and stir to mix well.
