onion, finely chopped
Put the cheeses into a blender, and mash mixture down.
Add just enough milk so that they blend well.
Then, add the spinach in small clumps, blending after each addition.
Pour the cheese mix into a medium saucepan.
Mix the remaining ingredients in.
Bring it slow boil, and cook until slightly thickened--mixture will thicken as it cools.
Eat with dipping chips, tortilla chips or french bread.
