Put the cheeses into a blender, and mash them down.
Add just enough milk so that the cheeses blend well.
Add spinach in small clumps until the whole bunch is gone.
Add onion and garlic and then pour the mix into a medium saucepan.
Mix in the remaining ingredients, adding milk to taste.
Bring mixture to a slow boil--mixture will thicken as it cools.
Serve with dippin' chips, Tortilla chips, or on French bread.
