Ingredients

2 slice bacon
1 large onion, chopped
3 clove garlic, minced
4 jumbo shrimp, peeled, deveined & tails off, raw
1 medium tomato, chopped
3 c monterey jack cheese, shredded
1/8 tsp tabasco
1/8 tsp cayenne pepper
1 dash(es) pepper

Directions

Cook bacon until crisp. Drain on paper towel.

Saute onion & garlic in bacon drippings until soft. Drain on paper towel.

Coarsely chop the shrimp. Crumble bacon & place in a small crock pot along with the other ingredients.

Cover & cook on LOW for about 1 hour, until the cheese is melted. Thin with milk if too thick. Serve with chips.
