Ingredients
- BROCCOLI BITES:
- 3 x large eggs
- 8 ounces colby cheese
- 8 ounces Monterey Jack cheese
- 1 - 16 oz boxes broccoli, frozen, thawed, drained & dried, chopped
- 6 slices bacon, cooked crisp & crumbled
- 3 tablespoons onion flakes, dehydrated
- 1/8 cup all-purpose flour
- Panko bread crumbs
- HONEY MUSTARD DIPPING SAUCE:
- 1 cup sour cream
- 1/3 cup mayonnaise
- 1/3 cup Dijon mustard
- 1/3 cup honey
- 4 teaspoons lemon juice
How To Make cheesy broccoli bites w/ honey mustard sauce

Step 1Drain thawed broccoli by pressing through a strainer. Dry well with paper towels.

Step 2In a mixing bowl, beat eggs with a whisk until well combined.

Step 3In a large plastic container, place all ingredients except bread crumbs. Add beaten eggs. Stir together with a spatula until thoroughly combined.

Step 4Refrigerate for 1 hour. NOTE: VERY IMPORTANT...This will bind the mixture together.

Step 5Meanwhile, make dipping sauce. In a medium bowl, combine sour cream, mayonnaise, & Dijon mustard. With a whisk, blend mixture thoroughly.

Step 6Slowly pour in honey & lemon juice & continue mixing until smooth. Cover & refrigerate until ready to use.

Step 7Heat about 4 cups of oil in a deep fryer or deep pan at 350 degrees F.

Step 8Pour bread crumbs into a shallow pan.

Step 9Remove mixture from fridge & form portions into 1" balls & coat well with bread crumbs.

Step 10Place Broccoli Bites into fry basket or pan. Make sure they do not stick together. Fry 1 minute, then remove & place on paper towel lined plate to absorb excess oil.

Step 11Serve hot with Honey Mustard Dipping sauce.
