black bean hummus

I have friends who are not very fond of garbanzo beans, so I enjoy the challenge of finding things they do like. This one is a favorite with work group lunches, and I usually serve with my Baked Pita Triangles.

Ingredients For black bean hummus

  • HUMMUS
  • 1 can
    black beans, not drained
  • 2 clove
    garlic, chopped
  • 3 Tbsp
    olive oil or sesame tahini
  • 2 Tbsp
    lime juice, fresh
  • 2 Tbsp
    white wine vinegar
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    ground coriander
  • 1/4 to 1/2 tsp
    sea salt, or to taste
  • 1/2 tsp
    fresh ground black pepper
  • TOPPING
  • 2/3 c
    plain greek yogurt
  • 2 Tbsp
    snipped coriander leaves
  • 2 Tbsp
    finely chopped green onions
  • 1/2 tsp
    lime juice, optional

How To Make black bean hummus

  • 1
    Place hummus ingredients in the workbowl of a food processor. Process until very smooth. Spoon into a serving dish.

    Stir together the topping ingredients. Spoon in dollops over the hummus. (Topping is optional, but we like it because it adds a fresh flavor.)
