Ingredients

HUMMUS
1 can(s) black beans, not drained
2 clove garlic, chopped
3 Tbsp olive oil or sesame tahini
2 Tbsp lime juice, fresh
2 Tbsp white wine vinegar
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 to 1/2 tsp sea salt, or to taste
1/2 tsp fresh ground black pepper
TOPPING
2/3 c plain greek yogurt
2 Tbsp snipped coriander leaves
2 Tbsp finely chopped green onions
1/2 tsp lime juice, optional

Susan's Notes:

I have friends who are not very fond of garbanzo beans, so I enjoy the challenge of finding things they do like. This one is a favorite with work group lunches, and I usually serve with my Baked Pita Triangles.

 

Directions

1
Place hummus ingredients in the workbowl of a food processor. Process until very smooth. Spoon into a serving dish.

Stir together the topping ingredients. Spoon in dollops over the hummus. (Topping is optional, but we like it because it adds a fresh flavor.)

Serve with pita bread chips or Baked Pita Triangles. Also good with celery, carrot, and bell pepper strips.

Susan..... I love hummus! I haven't ever had it with black beans... but I am a willing to try person!!!! I love beans and I love hummus... thanks for posting!!!!
