Ingredients For best ever: spinach dip

2 clovegarlic, minced

1 mdonion, chopped

1 Tbspolive oil

27 ozspinach or mixed greens (i used mixed greens)

3hot chili peppers, from jar, tops cut off and minced

1 pkgcream cheese (8 oz.), soft

1 cmilk or half and half
-
12 ozgrated monterey jack cheese

1 Tbspred wine vinegar
-
salt and pepper to taste

2 Tbspsour cream (opt)
How To Make best ever: spinach dip

1Saute onion, garlic, and peppers over medium heat until soft (I even let mine brown a little). Transfer to large bowl (I used my Kitchen Aid mixer) and mix in, spinach, cheese, cream cheese, milk, and vinegar. Season with salt and pepper. Spoon mixture into shallow baking dish (I used a 9 inch round cake pan)and bake at 400 degrees F. Bake until dip is bubbly and top is light brown, about 35 minutes. Top with 2 TBS sour cream and serve warm with tortilla chips.
