INGREDIENTS
2 and 1/2 cups (315 grams) all-purpose flour
1 and 1/4 teaspoons salt
6 Tablespoons (90 grams) unsalted butter, chilled and cubed

3/4 cup (180 ml) ice water
1 cup (200 grams) granulated sugar
1 and 1/2 teaspoons salt
1/2 cup (120 ml) room temperature water
12 Tablespoons (180 grams) unsalted butter, softened to room temperature
2 Tablespoons (30 ml) heavy cream
2 teaspoons fresh lemon zest
1/4 cup (60 ml) fresh lemon juice
6 large apples, cored, peeled, and thinly sliced* (use a variety for better flavor, such as Pink Lady, Granny Smith, or Honey Crisp)
1/4 cup (31 grams) all-purpose flour
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 and 1/2 teaspoons ground cinnamon
1/2 cup (100 grams) granulated sugar
1 egg, beaten
coarse sugar for topping
