Passed on by my Aunt Carol through our family reunion cookbook. The perfect sweet relish for adding to tuna fish sandwiches, tuna macaroni salad, burgers, and hot dogs.

Ingredients For sweet cucumber relish

  • 8
    large cucumbers, peeled and sliced
  • 1/4 c
    salt
  • 4 md
    onions, peeled
  • 4 md
    green bell peppers, seeded
  • 4 1/2 tsp
    celery seed
  • 4 1/2 tsp
    mustard seed
  • 2 1/2 c
    granulated sugar
  • 1 1/2 c
    apple cider vinegar

How To Make sweet cucumber relish

  • 1
    Place cucumbers in a large glass bowl. Stir in salt. Chill overnight.

    Drain and put through a coarse grinder or food processor.

    Grind peppers and onions.

    Place the vegetables in a saucepan with the seasonings, sugar, and apple cider vinegar. Bring to a boil. Cook for 30 minutes; stirring often. Put in sterilized jars and process for 10 minutes.
