Ingredients

SALAD

5 c
potatoes, peeled, cooked and cubed (about 6)
1 c
sliced celery
1/2 c
chopped onions
1/4 c
chopped red pepper

hard bolied eggs, chopped
2 Tbsp
chopped sweet pickles
1/2 tsp
dried parsley
salt and pepper to taste

DRESSING

1 c
light mayonnaise
1/4 c
light sour cream
1 1/2 Tbsp
vinegar
2 Tbsp
sugar
1 Tbsp
mustard

Directions Step-By-Step

Combine dressing ingredients and set aside.

In a large bowl, combine all salad ingredients.

Toss dressing with salad. Refrigerate before serving.

Note: If using Miracle Whip instead of mayonnaise, omit vinegar and use only 1 scant tbls. sugar.
