Ingredients

4 large
baking potatoes
vegetable oil
1/2 stick
butter
8 oz
carton of sour cream
2 tsp
prepared horseradish
1/2 tsp
salt
freshly ground pepper to taste
1 c
shredded cheddar

Step-By-Step

1Scrub the potatoes thoroughly and rub skins with oil; bake at 400 for 1 hour or until done.
2Allow the potatoes to cool to touch. Slice each potatoe legnthwise in half; carefully scoop out pulp, leaving shells in tact. Mash remaining ingredients together with pulp, except for cheese. Stuff shells with potatoe mixture; place on a baking sheet. Sprinkle with cheddar cheese; bake until cheese melts. Yield 4 servings.
