Ingredients

large potatoes, peeled and cubed
1/4 c
olive oil
1 tsp
ground caraway
1/4 tsp
ground cayenne pepper
salt to taste
4 Tbsp
fresh mint, finely chopped
4 Tbsp
fresh coriander leaves, finely chopped
4 Tbsp
fresh parsley, finely chopped
3 Tbsp
lemon juice

Step-By-Step

1Boil potatoes until cooked but still holding their shape.
2Heat the olive oil in a frying pan, add the potatoes, caraway, and cayenne pepper, salt and stir to lightly brown the potatoes.
3Remove potatoes from heat add the herbs, lemon juice then serve.
