Ingredients

1 lb
orzo pasta
2 Tbsp
water
1/2 c
sun dried tomato halfs
1 1/4 c
yellow peppers 1/4" dice
1/4 c
green peppers 1/4" dice
1 c
red peppers 1/4" dice
1/4 bunch
fresh parsley, finally chopped
1 bunch
scallions, chopped
3/4 c
red onions 1/4" dice
1/2 c
ripe olives, sliced
1/2 c
feta cheese, crumbled
1 Tbsp
white vinegar
2 Tbsp
olive oil
1/2 tsp
black pepper

Step-By-Step

1Prepare orzo as per package direction. Omitting salt and oil.
2Cover with vented film, and refrigerate until needed.
3When the orzo is cold add all the ingredients together in a bowl.
4Chill for 1 hour and serve
