Spinach-bacon salad w/ feta dressing

A wonderful spring time salad that goes well w/ a light meal or as a lunch.

Ingredients

1/2 c
feta cheese
3 Tbsp
olive oil
2 Tbsp
red wine vinegar
2 tsp
dijon mustard
2 tsp
finely chopped shallot
pinch of sugar
salt and pepper to taste
8 slice
canadian bacon
8 oz
fresh baby spinach
8 oz
sliced mushrooms
2
sliced scallions, white and green parts

Step-By-Step

1In a cruet jar, add cheese, oil, vinegar, mustard, shallots and a pinch of sugar. Shake to combine, season w/ salt and pepper. Shake again.

2In skillet, over medium heat, cook bacon until crisp, transfer to paper towels to drain. Cool. Crumble.

3In lg serving bowl, toss together spinach, mushrooms, scallions and bacon. Drizzle w/ dressing, toss gently.
