Ingredients For sesame lime shrimp salad with belgian endive

2 Tbspsoy sauce

1lime, juiced

1 Tbspvegetable oil **

2 tspsesame oil

1/2 cseedless cucumber, peeled, chopped

1/4 cred pepper, finely diced

2scallions, finely chopped

1 lbmedium shrimp, cooked

1 cquinoa, cooked

salt and pepper to taste

fresh cilantro and parsley

toasted sesame seeds (optional)

belgian endive (for serving)
How To Make sesame lime shrimp salad with belgian endive

1Mix the honey, soy, lime juice and oils in medium bowl.

2Add cucumbers, peppers, scallions, quinoa, and shrimp. Toss to coat.

3Season with salt, pepper, cilantro, parsley and sesame seeds. Serve in endive 'bowls'.
