salmon melt - monte cristo style

Use my recipe or your own favorite recipe for salmon salad, adding grated cheese right in with salad for a luscious melt. You can also substitute tuna for the salmon if you wish and replace the swiss cheese with any other that you'd like. Very versatile. Experiment!

Ingredients For salmon melt - monte cristo style

  • 6 slice
    sour dough bread
  • SALMON SALAD
  • 1 can
    (10 oz) salmon, drained well
  • 1 stalk
    celery, finely diced
  • 1/4 c
    onion, finely diced
  • 1 tsp
    dill, dried
  • 1 tsp
    capers, drained
  • 1 tsp
    white wine vinegar
  • 1/2 c
    light mayonnaise
  • 1/8 tsp
    kosher salt
  • 1/4 tsp
    pepper
  • 2/3 c
    swiss cheese, grated
  • BATTER
  • 3
    eggs
  • 1/3 c
    milk
  • 1/8 tsp
    salt
  • olive oil and butter for frying

How To Make salmon melt - monte cristo style

    Combine all ingredients for Salmon Salad.

    Spread 1/3 of the Salmon Salad on one slice of bread and top with a second slice of bread. Cut sandwich in half diagonally to make 2 triangles. Secure with toothpicks. Repeat with remaining bread and Salmon Salad.

    Heat olive olive oil and butter in frying pan or skillet on medium.

    Beat eggs, milk and salt together. Dip sandwich halves into the egg mixture and immediately fry. Brown on all sides, adding oil or butter to pan as needed. Serve immediately.
