Kristin's Seafood Salad

This is my family's favorite recipe for lunch. Either on bread or with lettuce as a salad. I use the fake crab pieces (pollock or cod), and sometimes add shrimp. I don't have specific quantities for the mayo because I just put as much as I like. Some people like more. I have substituted cooked chicken for the seafood and made chicken salad too.

Ingredients

4 c
cooked seafood (shrimp) or imitation crab meat (chopped)
1/2 c
mayonnaise
1 tsp
dijon mustard
1/8 tsp
hot pepper sauce
1/2 Tbsp
capers (finely chopped) or to taste
2 tsp
parsley flakes (can use fresh)
1 tsp
dried chives (can use fresh)
1/2 c
celery (chopped)

Chop seafood and celery

Mix rest of the ingredients to make the dressing

Mix all together and chill well

I love it just with lettuce or in a sandwich. I think it tastes even better the next day. I have used this same dressing and substituted chicken (for the seafood) and made a chicken salad too. Enjoy!
