indian summer salad
I use an orange in this as I'm not greatly in love with grapefruit and that works very well indeed, I add a light sprinkle of sea salt from personal preference. That said, this has been enjoyed very much at my house for a few years now. It's clean tasting, fresh and just plain yummy.

1carrot, shredded

1zucchini, shredded

1grapefruit, cut into bite size pieces (i prefer an orange)

6-8basil leaves, cut into ribbons

1/2inch fresh ginger, grated

1-3 Tbspsplenda sugar substitute, depends on taste

1 Tbspolive oil

pepper, to taste

1Mix all ingredients together in a bowl and chill 30 minutes.
