Indian Summer Salad

I use an orange in this as I'm not greatly in love with grapefruit and that works very well indeed, I add a light sprinkle of sea salt from personal preference. That said, this has been enjoyed very much at my house for a few years now. It's clean tasting, fresh and just plain yummy.

Ingredients

carrot, shredded

zucchini, shredded
1
grapefruit, cut into bite size pieces (i prefer an orange)
6-8
basil leaves, cut into ribbons
1/2
inch fresh ginger, grated
1-3 Tbsp
splenda sugar substitute, depends on taste
1 Tbsp
olive oil
pepper, to taste

Step-By-Step

1Mix all ingredients together in a bowl and chill 30 minutes.
2Enjoy!
