Indian Summer Salad
I use an orange in this as I'm not greatly in love with grapefruit and that works very well indeed, I add a light sprinkle of sea salt from personal preference. That said, this has been enjoyed very much at my house for a few years now. It's clean tasting, fresh and just plain yummy.

- carrot, shredded
- zucchini, shredded
- grapefruit, cut into bite size pieces (i prefer an orange)
- basil leaves, cut into ribbons
- inch fresh ginger, grated
- 1-3 Tbsp
- splenda sugar substitute, depends on taste
- 1 Tbsp
- olive oil
- pepper, to taste
1Mix all ingredients together in a bowl and chill 30 minutes.
