EGG SALAD (PLAN B)

If you have farm fresh eggs and plan to make deviled eggs, you should have a "Plan B", just in case. You know at least some (if not most) of those beautiful fresh eggs are going to be torn up when you try to peel them! That's just the way it is with really fresh eggs. You probably won't hear any complaints when you serve this "Plan B" instead (I never have!)

Ingredients

8 large
hard boiled eggs, peeled
1 1/2 to 2 tsp
sweet pickle juice
1/8 tsp
salt
1 tsp
sugar
1/2 c
miracle whip salad dressing
2 tsp
prepared yellow mustard
2 tsp
sweet pickle relish (optional)

Directions Step-By-Step

Chop peeled eggs medium to medium-fine and place in a medium size mixing bowl.

Sprinkle with pickle juice, salt and sugar.

Stir to mix.

Add Miracle Whip and yellow mustard and mix well. (May add sweet pickle relish, if desired.)

Cover and refrigerate until serving. Cover and refrigerate leftovers. Recipe may be doubled.
