A different twist on Cole Slaw...I love it! Gets better the longer it marinates in the dressing. So, make sure you make it at least 4 hours before serving.

Ingredients

1/2 medium
head, green cabbage or napa - shredded
2
green onion, thinly sliced
1/2 medium
red pepper, thin sliced or chopped
1 large
carrot, thinly julienned
1 small
garlic clove, minced
1/2
inch, ginger root, minced

DRESSING

1/8 c
soy sauce
sugar
to taste, optional - i didn't use any
1/4 c
+ 2 tablespoons, rice wine vinegar
black
pepper to taste
1/2 c
roasted peanuts

Directions Step-By-Step

Mix soy and vinegar together. Set aside.

In a medium bowl, add all other ingredients ( except nuts ) pepper to taste and toss.

Pour dressing over vegetables and toss. I place it in a zip lock baggie and every so often toss it in the bag while chilling.



Refrigerate for a good 4 hours. Before serving toss with roasted peanuts.
