This is another item on my 9th Anniversary Dinner Menu, & is from the cookbook A1 STEAK HOUSE FAVORITES.

I HAVE USED THIS OR A VERSION OF THIS RECIPE, BEFORE DAN & I WERE MARRIED. It is a great recipe, simple & Easy. The Sweet & Sour Hot Vinaigrette adds a lot of punch in flavor to this salad. The Feta cheeses takes it over the top & it is how I introduced my daughter Briana to Feta, & she loves anything with feta.

It was a great accompaniment to our meal. The recipe makes about 4 servings, & is quick to make, but PLEASE SERVE IT WHILE IT IS STILL WARM. YOU WILL NOT REGRET IT.

6 slice
bacon cooked on the stove top to reserve the drippings

Step-By-Step

Step 1 Direction Photo

1I am giving you the ingredients and amounts that I used. This is the book where the original recipe came from.

Step 2 Direction Photo

2Chop the green onions and mix with the baby spinach and set aside till needed.

Step 3 Direction Photo

3Cook the bacon over medium high heat in a large skillet until crisp, I used a 16 inch size. Remove bacon to paper towel and set aside till needed crumble when cool enough to handle. Save about 4 tablespoons of the bacon fat in skillet.

Step 4 Direction Photo

4Add the sugar and vinegar to a measuring cup or small bowl, and stir until the sugar dissolves. With heat still on medium high add the vinegar sugar mixture to the skillet, and heat until it boils. Then add the spinach and onions and toss until spinach begins to wilt, about 1 minute. Then remove from heat.

Step 5 Direction Photo

5Add the bacon and toss gently to mix. Serve immediately. I made each serving from the skillet.

Step 6 Direction Photo

6Then add the apples & feta and stir to mix. Serve immediately while still warm. I added the feta after I place it on the serving dish. Garnish with additional Apple slices if desired. Add a SPRINKLING OF CHOPPED CHIVE OVER EACH PLATE IF DESIRED.

Step 7 Direction Photo

7Had one left over for the next days dinner. You can nuke it in the microwave if you want it to be warm.
