This salad has, thus far pleased all who have tried it. A great mix of sweet and savory with a nice crunch.

Ingredients For apple, walnut, and bacon green salad

  • MAPLE CARAMELIZED WALNUTS
  • 1/2 c
    (125 ml) maple syrup
  • 2 Tbsp
    (30 ml) butter
  • 1 c
    (250 ml) walnuts or pecans, toasted
  • MAPLE DRESSING
  • 1/4 c
    (60 ml) mayonnaise
  • 3 Tbsp
    (45 ml) olive oil
  • 1/2
    clove garlic, finely chopped
  • 2 Tbsp
    (30 ml) cider or white wine vinegar
  • 2 Tbsp
    (30 ml) maple syrup
  • 1 tsp
    (5 ml) dijon mustard
  • salt and pepper
  • SALAD
  • 1/2
    red onion, very thinly sliced
  • 6 c
    (1.5 litres) mesclun lettuce
  • 1
    cortland apple or pear, peeled, cored, and thinly sliced
  • 4
    slices bacon, cooked and chopped

How To Make apple, walnut, and bacon green salad

    Preparation: Maple Caramelized Walnuts Line a baking sheet with parchment paper or a silicone mat. Set aside.

    n a saucepan, bring the maple syrup and butter to a boil and cook for 2 minutes. Add walnuts. Cook, stirring with a wooden spoon, until the sugar crystallizes (becomes grainy) on the nuts. Remove from the heat.

    Immediately spoon on the baking sheet. With a spatula, quickly spread the nuts. Season lightly with salt. Let cool completely. Roughly crush with a knife.

    Maple Dressing: In a vinaigrette blender, shake all the ingredients until the dressing is creamy. Season with salt and pepper.

    Salad: In a bowl of cold water, let the onion soak for about 5 minutes to mellow out the flavour. Drain.

    In a large bowl, combine the lettuce, apple, and onion. Add dressing to taste and toss well. Sprinkle with the walnuts and bacon.
