Watermelon, Cucumber & Feta Salad

Ingredients

6 c
watermelon, cut into pieces
1
ripe tomato, cut into pieces
2-1/22
english cucumbers, sliced and halved
1/2
vidalia onion, thinly sliced
1/2 small
carton reduced fat feta cheese (1/2 c. approx.)
3 Tbsp
lime juice
1 Tbsp
olive oil
1/8 tsp
sea salt
2 Tbsp
fresh mint
2 Tbsp
cilantro

Directions Step-By-Step

Combine first 5 ingredients in a serving bowl.

Add together lime juice, oil, salt, mint, cilantro; pour over watermelon mixture.

Toss lightly. Sprinkle additional mint and feta over top, if desired. Chill to blend flavors.
