Everyone needs a recipe for that hot summer day when you need something to cool you off a bit.

Recipe would be great served at a swimming party or Ladies Luncheon. Any kind of fruit can be used to make this.

Ingredients

cooked rice, cooled
1/2 c
quartered strawberries
1/2 c
grape halves

kiwi fruit, sliced into quarters
1/2 c
pineapple tidbits
1/2 c
banana slices
1/4 c
pineapple juice
1/2
honeydew melon, quartered
2 Tbsp
plain nonfat yogurt
1 Tbsp
honey
lettuce leaves

Directions Step-By-Step

Combine rice and fruit in large bowl. Blend pineapple juice, yogurt, and honey in small bowl. Pour over rice mixture; toss lightly. Serve on lettuce leaves.
