CRANBERRY APPLE SALAD

I love the color of this salad especially served in a white bowl at Christmastime! It is one of my husband's favorite dishes and will be a hit for any cranberry lover! Note: The "holly" in the center was made using 3 ARUGULA leaves and 3 whole cranberries!

Ingredients

2 box
strawberry jello
1 c
boiling water (add jello to boiling water, stir & cool (do not let gel)
3 medium
chopped apples ( or one extra large apple) finely chopped
1 lb
fresh cranberries
3/4 c
sugar
1 c
crushed pineapple, drained
pecans, in pieces or halves (optional)
note: this can be made using sugar-free jello for those reducing their sugar intake!

Step-By-Step

1MAKE JELLO (per above) chill but DO NOT LET SET)

2Place cranberries in a food processor until finely chopped.
Mix in sugar with chopped cranberries

3Add pineapple & apples to cranberry mixture and stir in Jello

4If desired, stir in a few pecans .. if you like nuts.. I also sprinkle a few on top, too.

5CHILL IN FRIDGE UNTIL SET or overnight .... and ENJOY!
