Bacon Romaine Salad w/ Lemon Dressing

This is a light refreshing salad that i made up fpr my mom on Mother's day 2010. She was please that I'm learning to rely on the tricks she's taught me.

Ingredients

2 bunch
romaine lettuce head
5 slice
bacon (thick)
2 large
eggs, hard boiled (wedge cut)
2 small
mini red bell peppers (thin sliced stripes)
1/4 c
green onions
1/2 c
glazed walnuts
1/2 c
dried cranberries (raspberry flavored are great)
1/2 c
diced fresh strawberries

SUMMER LEMON DRESSING

1/2 c
miracle whip
1/2 c
lemon juice
1/2 c
apple juice
3 Tbsp
olive oil, extra virgin
2 Tbsp
sweet basil
1 pkg
equal (two if you need a sweeter taste)

Directions Step-By-Step

Toss all ingredients (except the bacon and eggs) in a large salad bowl. Top the salad with bacon and eggs. Serve with the Summer Lemon Dressing.

Blend lemon juice and Miracle Whip in blender at high speed; add basil and olive oil. Gradually add the apple juice to your desired thickness. Add Equal one pack at a time to you desired sweetness. Chill and serve.
