From Pilar S. de Pérez, Santiago, Chile , who says "This typical Chilean salad is a good way to use leftover roast beef or ground beef and with the addition of lettuce, carrots and hard-boiled eggs or potato's, is almost a meal in itself."

1large head of lettuce (1 llechuga grande)

3cooked and chopped carrots (3 zanahorias cocidas)

2hard-boiled eggs (2 huevos duros) or 2 small potato's (2 small patatas)

1/2 lbcooked meat (1/4 kilo carne cocida)

salt (sal )

oil (aceite)

lemon (limon)

olive (rodeada de aceitunas)

little mayonnaise (mayonesa- poco )
How To Make salpicon - chilean salad

1ENGLISH:

2Chop lettuce, combine with the meat, carrots, eggs or potato's.

3Add salt, oil and lemon to taste.

4Serve with olives and garnish with mayonnaise.

6Se va juntando en la ensaladera la lechuga (lavada), picada a cuadritos finos con la carne cocida y molida, la zanahoria cocida y picada chiquita y los 2 huevos duros picados o patata's.

7Agrégue sal, aceite y limon a gusto.

8Se sirve rodeada de aceitunas y un poco de mayonesa encima.
